It favors products from the best local farmers and purveyors and reflects Friulian sensibilities about ingredients and proportion according to weather, climate, and calendar. Our menu celebrates the tradition of Frascas with the rustic elegance and simplicity of its dishes. And above all, it is Friulian. Each dish is inspired by the sophisticated flavors and international influences of the area that are at once quintessentially Italian yet unique to this extraordinary region. At Frasca, we champion our local farmers; the very richness and diversity of Colorado's food products was a defining factor in our decision to open our restaurant in Boulder.
